Boston Baked Beans
  • 2 cups great northern or pea beans
    1/4 lb. salt pork (lean)
    1 1/2 tsp. salt
    1/2 cup brown sugar
    1/2 tsp. dry mustard
    2 tbsp. molasses
    1 onion, diced.
Wash beans and and soak overnight. Cook until just tender. Drain, reserving liquid. Combine ingredients in bean pot. Cover with bean liquid. Cover and bake 6-8 hrs at 250 deg. Add more liquid if necessary.
